Blend of lambics aged on average 16 to 18 months and of Merlot grapes. The year’s blend, boled November 2022, was exceponally made with Merlot (55%), Grenache Noir (35%), and Syrah (10%). Lambic is rightly considered the missing link between the worlds of wine and beer. Saint Lamvinus reinforces this connection by adding grapes intended for winemaking. An intense, fruity beer with a long finish reminiscent of its winemaking origins. Merlot is the emblematic grape variety of Bordeaux, and the grapes we use to produce Saint Lamvinus come from the Cotes de Bourg. The maceration of approximately eight weeks allows the Lambic to extract all the tannins from the grapes. As with winemaking, a good harvest will yield a beer with more body and character, while a less successful harvest will result in a less fruity Saint Lamvinus with a more pronounced Lambic influence. The use of grapes typically used for wine production makes Saint Lamvinus a beer that symbolizes the connection between the worlds of wine and beer. Given the success of our product, we have since conducted many other trials with winemaking friends, most of whom work biodynamically and in a 100% natural way. These very small batches are only available for tasting at the brewery. History: Pascal Delbeck, at the time manager of the Belair castle in Saint-Emilion, is the initiator of this beer. The first two batches were actually produced in Bordeaux. Instead of receiving the fruit at the brewery as is traditionally done, we sent two-year-old Lambic to Saint-Emilion. Given its success, larger volumes had to be produced, which is why production continued at the brewery. We have been working with Merlot grapes from the Cotes de Bourg appellation since 2000.
