Maceration of fresh Hallertau Mittelfruh hops in a two-year-old Lambic. The natural acidity of Lambic and the subtle bitterness of Hallertau hops find a perfect balance here. In order to preserve the delicacy of the hops, the lambics chosen for the production of the Cuvee Saint-Gilloise are elegant and very refined in order to preserve the acidity/bitterness balance. Since there is no blending with young Lambic as in Gueuze and no addition of fructose as in fruit beers, the second fermentation in the bottle of Cuvee Saint-Gilloise is due to an addition of liquid sucrose. Like all beers from the Cantillon brewery, the Cuvee Saint-Gilloise is a beer with a very long shelf life, but like all hoppy beers, it is advisable to drink it young to enjoy the floral side of the hops. History: The Van Roy family are avid supporters of Royale Union Saint-Gilloise, the legendary football club of Brussels. Union was the most popular and successful club in Belgium until the 1960s. Although the club has been out of the first division for several decades, its popularity in Brussels remains very strong, and the Van Roy family is now in its fifth generation of fans in the stands of the old Stade Marien. In 2004, the club’s management asked us to create a special beer to commemorate the centenary of the club’s first Belgian Championship title in 1904. The Cuvee 1904 was born. It was followed by the Cuvee des Champions to celebrate the club’s promotion to Division 2 in the 2004/2005 season. Since then, the team not always playing like a true champion… it was decided to change the name of the beer a third and final time to Cuvee Saint-Gilloise.
