Stephane Maroiller has taken over the familytradition of organic winemaking in Burgundy, following in his father Patrick’s footsteps. Patrick,an early advocate of organic farming, transitioned Domaine Henri Richard’s vineyardsto organic methods in 2001. Stephane nowproduces certified organic wines from severalnotable locations, including Uchizy-BourgogneBlanc, Nuits Saint Georges-Bourgogne Pinot Noir,Marsannay, and Gevrey-Chambertin.With limited production, ranging from 600 to 1,200bottles per wine, Stephane also works as acontract farmer, specializing in organic farmingtechniques. He continues his father’s minimalistapproach, using indigenous yeasts and minimalsulfur. Stephane prefers manual work overmachinery, using an atomizer rather than atractor, and maintains traditions such asavoiding chemical sprays in the “Aux GrandsBandeaux” vineyard since 1960. His cellar work issimple, often avoiding pumps, resulting in exceptional wines.
