Petit-Roy winery was founded in 2017 by Seiichi Saito Wang in Chorey-les-Beaune, Burgundy, France. Seiichi is a winery founder of Japanese nationality with Chinese heritage, who moved to France in 2005 to begin his winemaking journey. After studying oenology in Beaune, he gained valuable experience at renowned estates such as Simon Bize, JF Mugnier, Armand Rousseau, and Leflaive. Additionally, Seiichi co-founded the popular restaurant La Lune in Beaune in 2014, known for its precise, elegant, and umami-rich cuisine.The winery manages approximately 2.1 hectares of vineyards, primarily growing regional appellation grape varieties, and utilizes biodynamic methods for cultivation, although it has yet to be certified. Seiichi’s winemaking philosophy emphasizes natural and minimal intervention techniques. He employs whole cluster fermentation for reds, limits extraction through pump-overs and gentle punch-downs, and uses minimal sulfur dioxide (SO2) during and after e?levage, as well as before bottling. In fact, he rarely adds SO2 during vinification and prefers to bottle his wines without fining or filtration.Seiichi’s wines reflect his unique journey in both wine and gastronomy, crafted to provide immediate enjoyment, showcasing bright fruit and a pure, lingering energy on the palate. Thanks to his meticulous approach and talent, Seiichi Saito Wang has quickly risen to prominence as one of the emerging stars in the Co?te de Beaune region.
